Friday’s Fancies: Bonfire Cake

The perfect cake to take along to your Bonfire party, its based on Nigella`s Old Fashioned Chocolate Cake using the all in one method so quick & easy leaving time to spend a bit longer on the decorating. Don’t forget the sparklers! Love Sarah x

200g plain flour
200g golden caster sugar
1 teaspoon Baking Powder
1/2 teaspoon bicarbonate of soda
40g cocoa powder175g soft butter
2 large eggs2 teaspoons vanilla extract
150 ml sour cream.
Oven temp Gas 4 180oC 350oF2 8inch/20cm buttered & lined sandwich tins.1.

Put the ingredients which should be at room temperature into a food processor & process until smooth.2. Divide the batter equally between the 2 sandwich tins & smooth the batter out.3. Bake for 30 minutes, checking they are done with a skewer, it should come out smooth.4. Cool in the tins for 10 minutes then remove to wire racks.

Icing.
175g soft unsalted butter
150g sifted icing sugar
450g cream cheese
1 teaspoon vanilla extract
1. Beat together the sugar & butter in a mixer.
2. Stir in the cream cheese.

Cake assembly2 x 150g boxes of mint or orange matchmakers.Cake sparklers.Sandwich cakes together with the icing, you are aiming for a cone shape so cut 2 inches in from the top cake`s outer edge diagonally to the outer edge of the bottom cake. The excess pieces of cake are added as another layer to form the top of the cone. Cover the outside of the cone with a thin layer of icing. It doesn’t have to be at all neat, a bit of a wobble looks better! The chocolate matchstick logs then cover the outside of the cake For a grand finale light the sparklers sticking out of the top of the cake and serve.
